Ingredients:

For Pakoras:

  • 1 cup gram flour (besan)
  • 1/2 cup spinach leaves, chopped (optional)

  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Water (as needed for batter)
  • Oil for frying

For Kadhi:

  • 2 cups yogurt, beaten
  • 1/2 cup gram flour (besan)
  • 1 tablespoon mustard oil or any cooking oil
  • 1/2 teaspoon fenugreek powder
  • 1 teaspoon fenugreek seeds (methi)
  • 1 teaspoon cumin seeds (jeera)
  • 1/2 teaspoon mustard seeds (rai)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2-3 green chilies, chopped
  • 1 inch ginger, grated
  • 1 sprig curry leaves
  • 2-3 dried red chilies
  • 2 cloves garlic, minced
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

For Pakoras:

  1. In a bowl, mix gram flour, chopped onions, chopped spinach (if using), red chili powder, turmeric powder, and salt.
  2. Gradually add water and mix to form a thick batter. The consistency should be such that it coats the back of a spoon.
  3. Heat oil in a pan for frying. Drop spoonfuls of the batter into the hot oil and fry until the pakoras are golden brown. Remove and set aside.

For Kadhi:

  1. In a bowl, mix beaten yogurt and gram flour until smooth. Add water if needed to achieve a smooth consistency.
  2. Heat mustard oil (or any cooking oil) in a large pot. Add fenugreek seeds, cumin seeds, mustard seeds, fenugreek powder, turmeric powder, and red chili powder. Sauté for a minute.
  3. Add chopped green chilies, grated ginger, curry leaves, dried red chilies, and minced garlic. Sauté for another minute until the spices release their aroma.
  4. Pour the yogurt and gram flour mixture into the pot, stirring continuously to avoid lumps.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer, stirring frequently, until the kadhi thickens.
  6. Add salt to taste and let it simmer for an additional 10-15 minutes.
  7. Just before serving, add the fried pakoras to the kadhi. Let it simmer for a few more minutes to allow the pakoras to absorb the flavors.
  8. Garnish with fresh coriander leaves.
  9. Serve Kadhi Pakora hot with steamed rice or chapati.
