Ingredients:

  • Semolina 1 & 1/2 cup
  • Desiccated Coconut 3 tbsp
  • Salt 1/2 tsp
  • Sugar 1/2 cup
  • Milk 1/2 cup
  • Melted Butter 1/2 cup
  • Honey 1/4 cup
  • Vanilla Essence 1/2 tsp
  • Sugar 1/2 cup
  • Water 1 cup

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease a baking dish (about 9×9 inches) with butter or oil.
  2. In a large mixing bowl, combine the semolina, sugar, melted butter, yogurt, desiccated coconut, milk, baking powder, baking soda, and vanilla extract. Mix until well combined. Let the mixture rest for about 10-15 minutes to allow the semolina to absorb the liquid.
  3. Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
  4. If using almonds for garnish, press them gently into the batter in a decorative pattern.
  5. Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the syrup. In a small saucepan, combine the sugar, water, and lemon juice. Bring to a simmer over medium heat, stirring occasionally, until the sugar is completely dissolved. Remove from heat and stir in the rose water, if using. Let the syrup cool slightly.
  7. Once the cake is done baking, remove it from the oven and immediately pour the warm syrup evenly over the hot cake. Allow the cake to absorb the syrup for at least 30 minutes before serving.
  8. Cut the Basbousa into squares or diamonds and serve either warm or at room temperature.
