Instructions:

  1. Prepare Equipment:
    • Sterilize your jelly jars and lids by placing them in boiling water for 10 minutes.
    • Place a small plate in the freezer for later testing.
  2. Combine Ingredients:
    • In a large saucepan, combine the fruit juice, lemon juice, and powdered pectin. Stir well to dissolve the pectin.
    • If using, add the optional butter to reduce foaming.
  3. Bring to a Boil:
    • Place the saucepan over medium-high heat and bring the mixture to a full rolling boil, stirring constantly.
  4. Add Sugar:
    • Once boiling, add the granulated sugar all at once, stirring continuously to avoid lumps.
  5. Return to Boil:
    • Bring the mixture back to a full rolling boil. Once it reaches this point, continue boiling for 1-2 minutes, stirring constantly.
  6. Test for Gel Point:
    • To test if the jelly has reached the gel point, place a small amount on the frozen plate and let it sit for a moment. Run your finger through the jelly, and if it wrinkles and holds its shape, it’s ready.
  7. Remove from Heat:
    • Once the gel point is reached, remove the saucepan from heat.
  8. Skim Foam:
    • Skim off any foam that may have formed on the surface.
  9. Fill Jars:
    • Pour the hot jelly into the sterilized jars, leaving about 1/4 inch headspace.
  10. Seal Jars:
    • Wipe the jar rims to ensure they are clean, place the lids on, and screw on the metal bands until they are fingertip-tight.
  11. Cool and Store:
    • Allow the jars to cool to room temperature before transferring them to the refrigerator. The jelly will continue to set as it cools.
