Prepare the Carrots:

  • Wash, peel, and grate the carrots using a fine grater.

Cook the Carrots:

  • In a heavy-bottomed pan, add the grated carrots and milk. Cook on medium heat, stirring occasionally to prevent sticking.
  • Cook until the carrots are soft and the milk is mostly absorbed. This may take 30-40 minutes.

Add Sugar:

  • The sugar will release moisture, so cook until the mixture thickens and the ghee starts to separate.

Add Ghee:

  • Add the ghee to the carrot and sugar mixture. Mix well and continue cooking.

Flavor with Cardamom and Saffron:

  • Add cardamom powder and saffron strands (if using). Mix well to infuse the flavors.

Cook until Ghee Separates:

  • Cook the mixture until the ghee separates from the halwa, and the mixture attains a beautiful, rich color.

Garnish:

  • Add the sautéed dry fruits back into the halwa. Reserve some for garnishing.
  • Garnish with chopped pistachios.

  • Serve Gajar Ka Halwa warm. It can be enjoyed as is or with a scoop of vanilla ice cream.
